Yes you can use Camtasia to video it and save it as gif. You can also vid it with any other software, import it into photoshop and save it as gif (not sure what versions support this but CS3 does).

First you need to record the screen with some sort of program and that program should be able to save it as gif. Unfortunately I only know paid applications.
Camtasia by Techsmith can do this. <- This is by far the easiest way to do it though.
And any other program that can capture video in .avi and then you'll also need Photoshop CS3 (or higher).
